PHILOSOPHY

My passion for bees was born from one of the hardest and most revealing times of my life.

When I have felt the most alone and during a life crisis that overwhelmed me with a devastating force, the kind where not even the bones remain, but also when I have been most connected to the essence, to that everything that we all once sensed.
Bees are a manifestation of the nature of that whole.

Although the untrained human eye only glimpses a bee, if you know how to look you can intuit much more.
He who knows how to look can see that the hive itself is a great being, made up of many bees.

But in addition, the hive is part of a much larger network and has its particular function in it; Well, it is responsible for connecting some flowers with others, letting the mystery of life take its course.
And when you are able to see that, to appreciate the interdependence that arises at every moment, it is impossible for you to feel alone again.
DIÀNIA: MYTHOLOGY, BOTANY AND BEEKEEPING

Diània: land of mountains
If we draw a line in the central regions of the Valencian Country, we find a territory where the mountains merge with the Mediterranean. That place is Diània. It’s not just a definition on a map; It is a habitat where the relief and climate create conditions that are not repeated anywhere else.
The legacy of Joan Pellicer and the Goddess Diana
To understand this land it is essential to know Joan Pellicer. A doctor and botanist, Pellicer dedicated his life to traveling through these valleys to rescue popular knowledge about plants. He was the one who recovered the name of Diània, evoking the ancient Roman Dianium (modern Dénia).
The name of this land comes from Diana, the goddess of wild nature, mountains and the moon. Diana was the protector of everything that could not be domesticated, and Pellicer connected her with our own mythology, describing Diània as a magical land, a «terra de dones d’aigua, gegants I bruixes».
Beyond the legends, Pellicer explained that Diània has been inhabited by many cultures —Iberians, Romans, Arabs— that, despite the passage of time, always maintained the same essence: a close relationship between nature and people. That connection is the heritage we try to preserve.
A refuge of flora between peaks
What makes mountains like Montgó, Bèrnia, Aitana, Montcabrer or Safor special is their biodiversity. We are facing the largest diversity of flora in Europe, with the highest proportion of medicinal herbs and endemic species on the entire continent.
This environment is the perfect refuge for bees and gives our honeys unique qualities in the world. An ancient tradition linked to the slow pace of the mountains is maintained here. At IZA, we work respecting the cycle of nature: rains, droughts and blooms lead the way. We are aware that bees, in their vulnerability, depend totally on this balance; If the cycle is altered, they are the first to suffer it.
What does a land taste like?
For us, the answer lies in mountain honey. It is the purest way to taste this territory that was once consecrated to the goddess of forests. By placing the hives in high areas, away from the intensive agriculture of the valleys, we ensure that the flowers visited by bees are free of the chemical treatments common in commercial crops.
At IZA we try to ensure that this ancestral relationship with the environment is not lost. We are just people taking care of a natural process, attentive to the hum of a land that, if we know how to listen to it, offers us the best of itself.
